The Ultimate Cup of Superb Coffee REQUIRES Water Temperature between 203° and 208° Fahrenheit (95° -to- 98° Celsius) for brewing the most flavorful BALANCE of taste, which comes ONLY from the oils of the coffee beans. Water "fresh from the boil" is about 4 to 8 degrees much too hot.
Cheap Espresso Machines that pass steam through the coffee grounds makes for a bitter-acrid like taste. If you add rich thick cream and sugar, it mellows-seasons and becomes good. Very good Espresso Machines (very expensive) use only 'Pump Pressure' to force hot water through the coffee grounds. However, a 2 oz. shot, does not make for a full cup of good coffee. Too many times, the water temperature and pump pressure is not 'regulated' with consistent accuracy resulting in wide variations of strength and taste from shot to shot (cup-to-cup). Automatic-Drip Machines usually do not saturate the coffee grounds completely and quick enough at the desired temperature to extract the oils sufficently for taste and caffeine balance. Also, they require a coarser grind which blocks the full release of oils. The hot water on demand machines (reservoir type) usually limit water temperature to 190° F or about 88° C, for SAFETY reasons, which is too cool to liquefy the oils properly.
